Ingredients
  1. 1/2 cup All-Purpose Flour
  2. 1/2 cup Whole Wheat Flour
  3. 1/2 cup Sugar
  4. 1 teaspoon salt
  5. 1 teaspoon pumpkin pie spice
  6. 3/4 teaspoon Baking Powder
  7. 1/2 teaspoon Baking Soda
  8. 1/2 teaspoon Cinnamon
  9. 1/2 teaspoon Nutmeg
  10. 1 1/4 cup Pumpkin Puree
  11. 1/2 cup Milk
  12. 2 Eggs, beaten
  13. 1/4 cup Maple Syrup
  14. 3/4 cup Quick Oats
Instructions
  1. Preheat oven to 375 degrees
  2. Grease muffin tin.
  3. In a large bowl, whisk flours, sugar, salt, pumpkin pie spice, baking powder, baking soda, cinnamon and nutmeg together.
  4. Stir pumpkin puree, milk, eggs and maple syrup into the dry ingredients until smooth.
  5. Fold in oats.
  6. Fill muffin cups 2/3 full and bake for 20-30 minutes.
Notes
  1. Great Tip: Use pumpkin butter instead of pumpkin puree, it gives extra spices and flavor depth. Also use pure maple syrup, you will notice a difference.
