Ingredients
  1. 2 1/4 cups Oat Flour
  2. 1 tablespoon Baking Powder
  3. 3/4 teaspoon Salt
  4. 1 teaspoon Cinnamon
  5. 1/2 teaspoon Ground Ginger
  6. 1/4 teaspoon Nutmeg
  7. 1/4 teaspoon Allspice
  8. 3 Eggs
  9. 2/3 cup Milk
  10. 1/2 cup Coconut Oil
  11. 1/2 cup Pumpkin Puree
  12. 3 tablespoons Maple Syrup
  13. 1 tablespoon Vanilla
Instructions
  1. In a large bowl, whisk the eggs.
  2. Add milk, coconut oil, pumpkin puree, maple syrup and vanilla. Whisk.
  3. Add baking powder, salt, cinnamon, ginger, nutmeg and allspice to mixture and mix well.
  4. Finally add oat flour and stir until just combined. Let sit for 10 minutes so the oats will soak up much of the liquids.
  5. Prepare waffle iron, make your waffles and enjoy!
Notes
  1. Make your own Oat Flour by putting 2 1/2 cups Oats into a Food Processor and let run for about 2 minutes.
  2. Batter does NOT keep well in refrigerator, make only what you will use at a time.
